Located just off Highway 41, in the small community of Carlisle, Indiana, Calisle Plaza Truckstop, has experience both with and without the Perfect Hold™ holding cabinet in their Broaster Foods® branded deli.

They offer both Genuine Broaster Chicken® and Bro-Tisserie® Chicken.  Thanks to the Perfect Hold™ unit, they area able to cook a sufficient amount of chicken and hold both products.  Manager Mary Jo Winship likes the Perfect Hold™ as it has helped the deli run more smoothly during rush times.  "We can always have fresh chicken available for our busiest times, and with the ease of use of the Perfect Hold™ cabinet, we can also keep a back-up supply of mashed potatoes, various entrees, almost any food product."

Placed between their two Broaster pressure fryers, they use the top of the holding cabinet as a work surface, saving time and space.  Depending on the time of year, Carlisle Plaza Truckstop may serve up to 22 cases of chicken per week.  The holding cabinet is employed at least eight hours a day during the winter months.  In the spring and summer, it may be used 12-20 hours at a time.
