Chicken Fajita Pizza (makes 2 pizzas)

Ingredients

  • 1 ready-made pizza crust

  • 2 c. Genuine Broaster Chicken®, cooked, skinned, and pulled into strips

  • 1 c. pizza sauce

  • 1 c. salsa

  • 1 yellow onion, sliced

  • 1 green pepper, sliced

  • 1 red pepper, sliced

  • 3 cloves of garlic, minced

  • 2 limes

  • 2 tsp. cumin

  • salt

  • pepper

  • 3 Tbsp. olive oil

  • 3 c. shredded Mexican cheese blend

Instructions

  • Preheat a convection oven to 400º F.

  • Heat 2 tablespoons of olive oil in a large sauté pan.

  • Sauté the onions, green peppers, and red peppers until they begin to soften slightly.

  • Add garlic, the juice of one lime, and one teaspoon of cumin, plus salt & pepper.

  • Sauté for one more minute, then remove from heat and set aside.

  • Season chicken strips with remaining juice, cumin, and salt & pepper, then toss lightly.

  • Stir together pizza sauce and salsa.

  • Brush the ready-made pizza crust with one tablespoon of olive oil.

  • Divide the sauce among both pizza crusts and spread out the sauce to within a 1/2" of the edge of the crust.

  • Place half of the vegetables and half of the chicken on each crust.

  • Top with cheese.

  • Bake at 400º F for 8-10 minutes.

  • Cut and serve with guacamole and sour cream, if desired.
