Lemon Bread
Using Broaster All-Purpose Batter
Ingredients

1-2/3
cups of Broaster All-Purpose Batter
-
1
cup of sugar
-
1/2
cup (one stick) of unsalted, room-temperature butter

2
large eggs
-
2
teaspoons of (packed) grated lemon peel

1
cup of whole milk
-
glaze
made from 1/4 cup of lemon juice and 1/2 cup of sugar (note:
please taste the glaze – if you like it sweeter, add more
sugar)
Instructions

Stir
butter and eggs in a bowl until creamy.

Mix
in half of the Broaster All-Purpose Batter, then add milk
and lemon peel.

Add
remainder of Broaster All-Purpose Batter and stir until
batter is in a cake-like consistency.

Place
batter in a lightly greased 8-1/2 x 4-1/2 x 2-1/2 loaf pan.

Preheat
oven to 325º F and bake for one hour. Result will be
similar to a pound cake.

After
baking, remove bread from pan and place on a cooling rack.

Prepare
glaze by placing sugar and lemon juice in a sauce pan and
cooking until sugar is dissolved.

Gradually
spoon glaze over the hot bread, adding more as glaze is
absorbed.

Makes
one loaf or approximately 8 servings.
Chocolate Bread Using Broaster All-Purpose Batter
Follow
the same direction as for the lemon bread, except replace the
grated lemon peel with 1/4 cup of cocoa powder and 1 teaspoon of
vanilla extract.
