Fryer
Beloit, WI – Broaster’s newly-designed Model 2400GH Gas
Pressure Fryer sets a new standard for high-capacity production
by offering the highest per hour output in the industry.
Cooking significantly faster than many other pressure fryers,
the Model 2400 enables the user to cook a volume of 64 pieces of
fresh chicken per load, producing as much as 320 pieces of
product per hour. This capability supplies the
highest-quantity production potential for large foodservice
establishments, and provides smaller operations with the most
efficient equipment to achieve the best end chicken.
Just like Broaster’s 1600 and 1800 Model Pressure Fryers, the
Model 2400 locks in natural flavors and seals out oil through
the pressure frying process. This creates consistently
tender, juicy and savory fried food, while significantly
reducing oil absorption. Broaster’s line of pressure
fryers is the only equipment authorized for producing the

The Model 2400 uses less energy in comparison to the quantity of
food it cooks per hour, and requires just half the oil of
competitive gas models. From its unique design components

Advanced Control Panel
In order to insure consistent food quality, the Model 2400’s
unique Auto Comp feature automatically adjusts cooking time to
accommodate varying load sizes and temperatures. In addition,
the Temp-N-Time™ Preset mechanism allows users to preset cook
cycles for a variety of foods, simplifying training procedures
and maximizing quality. Lastly, the Model 2400 includes an
automatic cook cycle counter that monitors production between
filtering.
Cooking Well
The Model 2400 has a round cooking well for more consistent heat
distribution and a more uniform cooking process, resulting in a
better end product. Broaster’s round well eliminates “cold
spots” and avoids unutilized cooking area. In addition, its
larger surface area helps keep food from sticking together.
Lastly, the well’s heavy stainless steel construction reduces
oxidation that causes crumb carbonization on well surfaces.
Cover Assembly
The Model 2400 cover offers a patented counter-balance lift
system that delivers quick, one-hand opening and closing for
maximum operator safety and ease of use. Its safety interlock
system resists opening until all the pressure is released.
Likewise, this system prohibits pressure release unless the
proper closing sequence has been followed, optimizing user
protection.
Built-in Filter
The Model 2400’s uniquely-designed compact filter system
stores conveniently beneath the unit. With just the flip of a
lever, the filtering process begins – and there is no need to
reach near the hot well to disconnect any fittings. The filter
system’s straight gravity drain and power return system
provide fast, efficient drainage to minimize clogs.
Safety Features
The Model 2400 features a pressure-regulating valve interlocked
with the drain valve, which prevents accidental opening during
pressure frying. In addition, the ratcheting fry basket handle
significantly improves operator leverage when transferring food
from the well to the serving pan and eliminates the need for a
frying mitt. Finally, the Model 2400 features a high temperature
limiter as a back-up safety measure.
